Earth Day Rice Crispy Pops

Ingredients
1 bag (10 ounces) mini marshmallows
5 tablespoons plant-based butter
5 cups crispy brown rice cereal
1 package (12 ounces) white chocolate morsels
10 cake pop sticks
2 tablespoons vegetable oil, divided
1/4 teaspoon blue food coloring + 1/4 teaspoon green food coloring
Directions

1. Line 13 x 9-inch baking dish with foil so that foil extends about 2 inches over sides of dish; spray with cooking spray. Line rimmed baking pan with parchment paper

 

2. In large saucepot, melt marshmallows and butter over medium-low heat; remove from heat and fold in cereal. Firmly press marshmallow mixture into prepared dish; refrigerate 2 hours

 

3. Using overhanging sides of foil, transfer cereal bar to cutting board and remove foil; using 2 3/4- to 3-inch round cutter or glass, cut 10 circles from bar.

 

4. In medium microwave-safe bowl, heat chocolate morsels in microwave oven on high 2 minutes or until melted, stirring every 30 seconds. Dip 1 end of cake pop sticks into chocolate, then insert into bottom edge of circles; place on prepared pan and refrigerate 20 minutes

 

5. Divide melted chocolate into 2 small bowls. Stir 1 tablespoon oil and blue food coloring into 1 bowl until incorporated; stir remaining 1 tablespoon oil and green food coloring into remaining bowl until incorporated

 

6. Transfer blue chocolate to piping bag fitted with small round tip; transfer green chocolate to separate piping bag fitted with small round tip. Pipe blue chocolate and green chocolate onto pops to create "Earth." Refrigerate pops 20 minutes or until hardened. Makes 10 pops.
